CHICKEN CIATTORI SAUCE

3 sticks of celery chopped coarsely 2 green peppers chopped coarsely 1 med.onion chopped coarsely 2 cans of diced tomatoes 2 tablespoons crushed garlic 2 tablespoons oregano pepper to taste 1 tsp. basil 1 tsp. thyme Saute all vegetables together in a little veg.oil along with all spices Then add your diced tomatoes and cook on high for 5 mins. Then turn down to a simmer for about 30 mins. At the last min.add about a tablespoon of sugar to cut the acid from the tomatoes You will have a great sauce for chicken

ALFREDO SAUCE

1/2 ltre.cream 3 cups water 1 tablespoon chicken soup base pepper to taste 1/2 cup flour 1/2 cup butter 1/2 cup parmesan cheese powder Place all ingredients in a pot except for flour and butter. Bring to a boil then slow down to a simmer.Once you cook for about 30 mins.Thicken with a flour and butter rue.You have a great alfredo sauce for pasta or chicken.

LINGUINI SAUCE

6-8 boiled chicken thighs 3 med carrots chopped fine 1 med.onion chopped fine 3 sticks of celery chopped fine 1 tablespoon crushed garlic Saute all of these in saucepan with a little veg oil Then add 1-28 oz.can diced tomatoes 1 10-14 oz.can tomato sauce 2 pints cream 1 tsp. pepper 1 tablespoon chicken soup base 2 tablespoons oregano dash of seasoning salt When all of these come to a boil turn down to a simmer.Cook for about 30 mins.Then thicken with a flour and butter rue.Serve over linguini pasta
