LEMON CAKE WITH PEACHES

APPLE CRUMBLE 

1-9" pie shell 8-10 apples depending on size 2 cups corn syrup 3 tablespoons cinnamon 1 tablespoon cornstartch 1 1/2 cups oatmeal 1 1/2 cups flour 2 cups melted butter Peel and cut apples,place in a bowl,mix in about 1 1/2 cups melted butter then a 1 tablespoon cornstartch.add about 2 tablespoons of cinnamon to mixture,then about 2 cups of cornsyrup. Topping: Add 1 1/2 cups oatmeal,1 1/2 cups flour, 3 tablespoons of cinnamon.Add 1 1/2 cups of melted butter or enough until mixture is moist. Bake at 350 for 15 mins.then turn oven down to 325 for 30 mins.Should be nice and golden.Then let cool before serving.

CARROT CAKE

Preparation Time:30 min. Cooking Time:45 min. 3 eggs 1 cup vegetable oil 1 1/4 cups soft brown sugar 1 1/2 cups flour 1 tsp.baking soda pinch of salt 2 tsps.ground cinnamon 1 2/3 cups grated carrot 3/4 cup chopped walnuts (optional)I prefer raisins. 125g(4 oz.) creamed cheese softened 30 g(1 oz)butter 1 cup icing sugar 2 tsps.orange juice Preheat oven to moderate 350F.Grease a deep 9" square cake pan and line base with baking paper. Combine eggs,oil and brown sugar in a lrg.bowl.Add the sifted flour,soda,salt and cinnamon and beat with electric mixer until smooth.Add the carrot and stir well.Pour the mixture into the pan and bake for 45 mins. or until golden brown.Leave at least 20 mins.to cool before serving.To make cream cheese icing put the cheese,butter,sugar,and orange juice in a bowl and beat together until the mixture is spreadable.You may top with walnuts if desired.
